Double Chocolate Zucchini Muffins

Ingredients

  • 1 cup nondairy milk
  • 1/4 cup neutral oil
  • 2 tablespoons maple syrup
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of sea salt
  • 1/4 cup cocoa powder
  • 1/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup grated zucchini
  • 1/4 cup nondairy chocolate chips

Preparation

  1. Preheat oven to 350 degrees and line 6 muffin tins with paper liners or lightly oil them.

  2. Add non-dairy milk to a large bowl and stir in oil, maple syrup, and vanilla extract.

  3. Add flour, baking powder, baking soda, cocoa powder, coconut sugar, and sea salt, then mix until just combined.

  4. Fold in grated zucchini and chocolate chips.

  5. Scoop the batter into the muffin tins, dividing evenly, and sprinkle additional chocolate chips over the batter if desired.

  6. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
