Gluten-Free Roasted Garlic Cashew Pasta

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup water or vegetable broth
  • 6 cloves garlic
  • 12 oz brown rice pasta
  • Tomatoes
  • Fresh basil

Preparation

  1. Soak the cashews in warm water for at least 20 minutes or overnight, then drain and rinse.

  2. Heat the oven to 350 degrees Fahrenheit.

  3. Place the garlic in tin foil or on a parchment-lined pan with the tomatoes and roast for 35-45 minutes until the tomatoes split and the garlic is browning.

  4. Remove from oven and start cooking the pasta. Cook the pasta according to package directions until al dente

  5. Add the cashews to a small blender with 1/2 cup warm water or vegetable broth and the roasted garlic. Blend until creamy.

  6. Toss the sauce with the pasta. If the sauce is too thick, thin it with pasta cooking water.

  7. Top with extra roasted garlic, tomatoes, and fresh basil. Enjoy!
