Chickpea Pasta with Roasted Garlic Cream Sauce

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup vegetable broth
  • 6 cloves of garlic

Preparation

  1. Soak your cashews in warm water at least 20 minutes, or overnight

  2. Drain and rise

  3. Heat your oven to 350 degrees

  4. Place garlic on a parchment lined pan and roast for 15-25 minutes

  5. Cook your pasta while your garlic roast

  6. Add cashews, to a small blender with 1/2 cup warm water or vegetable broth and roasted garlic

  7. Blend until creamy and toss with your pasta

  8. If the sauce is too thick, thin with pasta cooking water
