Chickpea Pasta with Roasted Garlic Cream Sauce
Ingredients
- 1/2 cup raw cashews
- 1/2 cup vegetable broth
- 6 cloves of garlic
Preparation
Soak your cashews in warm water at least 20 minutes, or overnight
Drain and rise
Heat your oven to 350 degrees
Place garlic on a parchment lined pan and roast for 15-25 minutes
Cook your pasta while your garlic roast
Add cashews, to a small blender with 1/2 cup warm water or vegetable broth and roasted garlic
Blend until creamy and toss with your pasta
If the sauce is too thick, thin with pasta cooking water
