Creamy Herbed Cashew Sauce with Pasta

Ingredients

  • 1 cup raw cashews
  • 1 cup vegetable broth
  • 12oz pasta
  • 3 shallots (finely chopped)
  • 2 minced garlic cloves
  • 3/4 tsp dried thyme
  • cashew cream
  • salt/pepper to taste

Preparation

  1. Soak 1 cup raw cashews in boiling water for about 15 minutes

  2. Drain and blend with 1 cup vegetable broth until smooth

  3. Cook 12oz pasta as per packet directions

  4. Drain and reserve 1 cup cooking liquid

  5. Sauté 3 shallots (finely chopped) in a little olive oil or veggie broth until translucent

  6. Add 2 minced garlic cloves and 3/4 tsp dried thyme (or 1 tbsp chopped fresh thyme leaves) and sauté another minute

  7. Add 1/3 cup vegetable broth and stir to incorporate

  8. Mix in cashew cream (and salt/pepper to taste)

  9. Bring to a boil before reducing heat and simmer until thickens

  10. Mix in cooked pasta and reserved pasta cooking liquid. Heat until warmed through
