Creamy Herbed Cashew Sauce with Pasta
Ingredients
- 1 cup raw cashews
- 1 cup vegetable broth
- 12oz pasta
- 3 shallots (finely chopped)
- 2 minced garlic cloves
- 3/4 tsp dried thyme
- cashew cream
- salt/pepper to taste
Preparation
Soak 1 cup raw cashews in boiling water for about 15 minutes
Drain and blend with 1 cup vegetable broth until smooth
Cook 12oz pasta as per packet directions
Drain and reserve 1 cup cooking liquid
Sauté 3 shallots (finely chopped) in a little olive oil or veggie broth until translucent
Add 2 minced garlic cloves and 3/4 tsp dried thyme (or 1 tbsp chopped fresh thyme leaves) and sauté another minute
Add 1/3 cup vegetable broth and stir to incorporate
Mix in cashew cream (and salt/pepper to taste)
Bring to a boil before reducing heat and simmer until thickens
Mix in cooked pasta and reserved pasta cooking liquid. Heat until warmed through
