Creamy Vegan Pasta with Cashew Sauce

Ingredients

  • 1 cup raw cashews
  • 1 cup plant-based milk
  • 2 tablespoons nutritional yeast
  • salt to taste
  • pasta (as per package instructions)
  • 1 garlic clove (optional)
  • chopped dried sweet peppers or dried tomatoes or fresh mushrooms (optional)

Preparation

  1. Soak cashews in water overnight, then drain.

  2. Blend the drained cashews with plant-based milk, nutritional yeast, and salt in a high-speed blender or food processor to make the sauce.

  3. Cook pasta according to package instructions.

  4. While pasta is cooking, preheat a saucepan with 1 garlic clove and chopped dried sweet peppers or alternatives like dried tomatoes or mushrooms.

  5. One minute before pasta is done, drain it and add to the saucepan with the garlic and peppers mixture.

  6. Pour the creamy sauce over the pasta in the saucepan and stir together for a minute.

  7. Serve immediately.
