Indian Summer Spiced Rice Dish

Ingredients

  • 200g Rice
  • 2 tsp olive oil
  • 2 tsp turmeric
  • 1-2 tsp cumin
  • 1-2 tsp coriander
  • 2 tsp ginger
  • 3 cardamom pods
  • 1 chopped onion
  • 2 garlic cloves
  • 1 litre stock
  • Veggies (chopped or frozen)
  • Cooked chicken
  • Mango or brinjal chutney (for serving)

Preparation

  1. Measure 200g of rice and rinse and drain.

  2. In a large pan, heat 2 tsp olive oil, then add 2 tsp turmeric, 1-2 tsp cumin, 1-2 tsp coriander, 2 tsp ginger, and 3 cardamom pods.

  3. Add 1 chopped onion and 2 garlic cloves, and allow to heat.

  4. Add the rice and stir it all around.

  5. Add a dash of water and then gradually add 1 litre of stock, about 250ml at a time.

  6. Chop veggies or use frozen and add them as the mixture cooks.

  7. Add cooked chicken towards the end of cooking.

  8. Serve the dish hot, warm, or cold with mango or brinjal chutney.
