Easy Low-Fat Butter Chicken

Ingredients

  • x2 chicken breasts
  • 1/2 can low fat coconut milk
  • x1 tbsp butter
  • x1 red onion
  • x2 tbsp brown sugar
  • garlic
  • ginger
  • x3 tbsp tomato purée
  • chill flakes
  • x1 tsp turmeric
  • x1 tbsp cumin
  • x1 tbsp garam masala
  • chopped coriander
  • 1. fry the onion, garlic and ginger in butter
  • 2. add the tomato purée and sugar
  • 3. add the chicken and coconut milk and cook
  • 4. serve with rice/naan - chopped coriander
