Easy Fragrant Fish Curry Dish

Ingredients

  • 4 fillets of frozen fish
  • 1 tin chopped tomatoes
  • 500g mixed frozen veggies
  • 1 tbsp tomato purée
  • 2 tsp turmeric
  • 1 tsp cumin
  • 1 tsp ginger
  • 1 tsp coriander
  • 1 crushed garlic clove
  • Mixed herbs
  • 2 inch block of creamed coconut
  • 100ml milk

Preparation

  1. Place the frozen fish in a pan, cover with the chopped tomatoes and simmer for 10 minutes to defrost then flake the fish

  2. Add in the frozen veggies and simmer

  3. Add in tomato purée, spices, garlic and simmer

  4. When it’s smelling good, add in the creamed coconut block, milk and herbs then allow it to simmer and meanwhile cook the rice
