Vegan Spiced Lentil Kitcheri with Peas

Ingredients

  • 1 cup lentils
  • 1/4 cup green split peas
  • 3 cloves garlic
  • 1/2 red onion
  • 1 inch ginger
  • 1/2 tsp turmeric
  • 1/2 tsp mustard seeds
  • 1/2 tsp coriander
  • 2 tsp cumin
  • 3 cups vegetable broth
  • Bunch of cilantro
  • 1 cup frozen peas
  • Salt and pepper to taste

Preparation

  1. Sauté the onions, garlic, and ginger until onions soften.

  2. Add in lentils and split peas along with all the other spices.

  3. Add veggie broth and cilantro with stems.

  4. Bring to a boil and reduce to a simmer.

  5. Allow to cook for about 40-45 minutes or until split peas break up and thicken the stew.

  6. Add the frozen peas and allow to thaw in the stew then serve.

  7. Can be made in the instant pot set on manual for 17 minutes with natural release.
