Lemon Arugula Pizza for Memorial Day
Ingredients
- Trader Joe's garlic and herb pizza dough
- whole wheat flour
- 3 tablespoons extra virgin olive oil (EVOO)
- 2 cloves minced garlic
- non-dairy cheese (e.g., Miyoko's mozzarella, Good Planet shredded mozzarella)
- 3 cups fresh arugula
- lemon wedges
- 1 tablespoon oil (for salad)
- 1/4 cup olive oil (for dressing)
- 3 tablespoons lemon juice
- 1 clove minced garlic (for dressing)
- salt
- pepper
Preparation
Roll out Trader Joe's garlic and herb pizza dough with whole wheat flour and puncture it with a fork every 2-3 inches.
Evenly distribute 3 tablespoons of extra virgin olive oil (EVOO) and 2 cloves of minced garlic.
Top with your favorite non-dairy cheese, such as Miyoko's mozzarella and Good Planet shredded mozzarella.
Bake in the oven at 450 degrees Fahrenheit for 10-12 minutes.
Top with arugula salad and lemon wedges.
For the arugula salad, massage 3 cups of fresh arugula with 1 tablespoon of oil.
Dress the salad with homemade dressing made from 1/4 cup olive oil, 3 tablespoons lemon juice, 1 clove of minced garlic, salt, and pepper.
