Oven Baked Potato Fries
Ingredients
- 4 medium russet potatoes
- 1-2 tbsp olive oil or coconut oil
- 2 tbsp balsamic vinegar
- 2 tbsp soy sauce
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika powder
- 1 pinch smoked paprika (optional)
- 2 tbsp nutritional yeast flakes (optional)
- salt and pepper to taste
Guacamole
- 1 medium avocado
- 1 small tomato
- 2 cloves garlic
- 1 tbsp lime juice
- A small handful of greens (e.g. basil, parsley)
- A splash of coconut milk
- onion powder, cumin, salt and pepper to taste
Preparation
Preheat oven to 425°F (220°C).
Slice the potatoes into wedges.
In a large bowl, combine the olive oil or coconut oil, balsamic vinegar, soy sauce, Italian seasoning, garlic powder, onion powder, paprika powder, smoked paprika (if using), nutritional yeast flakes (if using), salt, and pepper.
Toss the potato wedges in the seasoning mixture until evenly coated.
Spread the coated potato wedges in a single layer on a baking sheet.
Bake for 30-40 minutes, flipping halfway through, until golden and crispy.
For the guacamole, mash the avocado in a bowl.
Finely chop the tomato, garlic, and greens.
Add the chopped tomato, garlic, greens, lime juice, coconut milk, onion powder, cumin, salt, and pepper to the mashed avocado.
Mix all guacamole ingredients well to combine.
