Sazón Lime Chickpea Vegetable Bowl

Ingredients

Sazón lime chickpeas

  • 1 can chickpeas
  • a few splashes coconut aminos or low sodium soy sauce
  • 1 tsp chili lime seasoning
  • 1/2 tsp sazón

Sautéed sazón vegetables

  • 1/4 diced red onion
  • 4 sliced baby mushrooms
  • 1/2 sliced zucchini
  • 1/2 diced bell pepper
  • 1/2 tsp sazón
  • 1/2 tsp chili lime seasoning
  • 2 tsp coconut aminos or low sodium soy sauce
  • zest of 1 lime (optional)
  • juice of 1/2 small lime (optional)

Rice

  • forbidden rice

Toppings

  • mashed avocado
  • red chili flakes
  • cilantro
  • extra lime juice

Preparation

  1. Rinse and drain the chickpeas

  2. Toss chickpeas with a few splashes of coconut aminos or low sodium soy sauce, 1 teaspoon chili lime seasoning, and 1/2 teaspoon sazón

  3. Place chickpeas in air fryer for 10-15 minutes at 370°F depending on desired crispiness

  4. Sauté 1/4 diced red onion and 4 sliced baby mushrooms until softened

  5. Add 1/2 sliced zucchini, 1/2 diced bell pepper, 1/2 teaspoon sazón, and 1/2 teaspoon chili lime seasoning and stir to cook

  6. Add 2 teaspoons coconut aminos or low sodium soy sauce and sauté until veggies are coated and liquid is absorbed

  7. Optionally, add zest of a lime and squeeze juice of half a small lime over the vegetables

  8. Cook forbidden rice in a rice cooker according to package instructions

Assembly

  1. Assemble the bowl with sazón lime chickpeas, sautéed sazón vegetables, and cooked rice

  2. Top with mashed avocado, red chili flakes, cilantro, and extra lime juice
