Sweet Roasted Bell Pepper Sauce
Ingredients
- 4 red or orange bell peppers
- 1 yellow onion
- 4 large garlic cloves
- 1-2 tbsp oil with a high smoke point
- 1 tbsp dried rosemary
- 1 tbsp dried oregano
- 1/2 cup vegetable broth (sub: oat, soy or almond milk)
- Salt & pepper to taste
- Handful fresh basil or 1/2 tbsp dried basil
- 4 cups rigatoni or other pasta
Optional
- 1 tbsp nutritional yeast
Preparation
Remove the stem and seeds from the bell peppers and cut them in half. Cut the onion in half. Coat the bell peppers, onion, and garlic with oil, salt, rosemary, and oregano. Place on a parchment-lined baking sheet.
Roast at 400°F for 25-30 minutes, carefully removing the garlic cloves after 15 minutes to prevent burning.
Remove from the oven and let cool for a few minutes. Remove the skins from the bell peppers.
Place the bell pepper, onion, and garlic in a blender or food processor. Add a handful of fresh basil or half a tablespoon of dried basil. Add the vegetable broth and blend until smooth and creamy. Add salt and pepper to taste.
Serve topped with fresh basil or a sprinkle of nutritional yeast and enjoy.
