Sweet Roasted Bell Pepper Sauce
Ingredients
- 4 red or orange bell peppers
- 1 yellow onion
- 4 large garlic cloves
- 1-2 tbsp oil with a high smoke point
- 1 tbsp dried rosemary
- 1 tbsp dried oregano
- 1/2 cup vegetable broth (sub: oat, soy or almond milk)
- salt & pepper to taste
- handful fresh basil or 1/2 tbsp dried basil
- optional: 1 tbsp nutritional yeast
- 4 cups rigatoni or other pasta
Preparation
Remove the stem and seeds from the bell peppers and cut in half
Cut the onion in half
Coat the bell peppers, onion and garlic with oil, salt, rosemary and oregano (feel free to add your favorite herbs!)
Place on a parchment-lined cooking sheet
Roast at 400 f for 25-30 min (carefully remove the garlic cloves at 15 min so they don’t burn)
Remove from oven and let cool for a few minutes
Remove the skins from the bell peppers (this makes the sauce sweeter and smoother)
Place the bell pepper, onion, and garlic in a blender or food processor
Add a handful fresh basil or half a tablespoon dried basil
Add the broth, and blend until smooth and creamy
Add salt and pepper to taste
Serve topped with fresh basil or a sprinkle of nutritional yeast and enjoy!
