The Perfect Chocolate Zucchini Brownies

Ingredients

Brownies

  • 1 cup organic almond butter (I used @foodtonourish)
  • 1 scoop choc protein powder (make sure it's FODMAP friendly)
  • 1 1/2 cups zucchini
  • 1 flax egg
  • 1/4 cup maple syrup
  • 2 squirts stevia
  • 1 tsp baking powder
  • 1/2 cup cocoa powder
  • 1/4 cup raw cacao powder

Glaze

  • 1/4 cup melted coconut oil
  • 2 tbsp maple syrup
  • 1/4 cup cocoa powder
  • 1 scoop protein powder

Preparation

  1. Combine all brownie ingredients in a food processor until almost smooth.

  2. Grease your pan with coconut oil.

  3. Pour batter into the pan.

  4. Bake at 350°C for half an hour.

  5. Combine all glaze ingredients until smooth and set aside.

  6. Once brownies are done baking, apply the glaze and refrigerate until it hardens.
