Vegan Paleo Chocolate Chip Cookie Skillet

Ingredients

  • 1 flax egg (1 tablespoon ground flax seeds + 3 tablespoons water; refrigerate for 15-20 minutes)
  • 3 tablespoons maple syrup
  • 1/4 cup melted coconut oil
  • 1/3 cup almond butter
  • 1 tablespoon vanilla extract
  • 1 cup almond flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • Vegan chocolate chips (amount as desired)

Preparation

  1. Prepare the flax egg by mixing 1 tablespoon ground flax seeds with 3 tablespoons water and refrigerate for 15-20 minutes.

  2. In a bowl, mix the wet ingredients: flax egg, maple syrup, melted coconut oil, almond butter, and vanilla extract.

  3. Add the dry ingredients: almond flour, baking soda, cinnamon, and sea salt, and mix well.

  4. Coat the bottom of an 8-inch cast iron skillet with coconut oil.

  5. Add the mixture to the skillet.

  6. Top with vegan chocolate chips.

  7. Bake at 325°F for 18 minutes.

  8. Broil for 1 minute to crisp the edges.
