Vegan Paleo Chocolate Chip Cookie Skillet
Ingredients
- 1 flax egg (1 tablespoon ground flax seeds + 3 tablespoons water; refrigerate for 15-20 minutes)
- 3 tablespoons maple syrup
- 1/4 cup melted coconut oil
- 1/3 cup almond butter
- 1 tablespoon vanilla extract
- 1 cup almond flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon sea salt
- Vegan chocolate chips (amount as desired)
Preparation
Prepare the flax egg by mixing 1 tablespoon ground flax seeds with 3 tablespoons water and refrigerate for 15-20 minutes.
In a bowl, mix the wet ingredients: flax egg, maple syrup, melted coconut oil, almond butter, and vanilla extract.
Add the dry ingredients: almond flour, baking soda, cinnamon, and sea salt, and mix well.
Coat the bottom of an 8-inch cast iron skillet with coconut oil.
Add the mixture to the skillet.
Top with vegan chocolate chips.
Bake at 325°F for 18 minutes.
Broil for 1 minute to crisp the edges.
