Vegan Baked Hasselback Potatoes with Sauce

Ingredients

  • 4 baking potatoes
  • Herb oil
  • 1.5 cups soaked cashews
  • 1.5 tbsp coconut oil
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp Italian herbs
  • 1.5 tbsp nutritional yeast
  • 2 tsp salt
  • Juice of 1 lemon

Preparation

  1. Blend the soaked cashews with coconut oil, onion powder, garlic powder, Italian herbs, nutritional yeast, salt, and lemon juice to create a sauce

  2. Preheat oven to 200°C

  3. Slice the baking potatoes in hasselback style, making thin cuts almost through to the bottom

  4. Brush the sliced potatoes with herb oil

  5. Place the potatoes on a baking tray and bake for 45-60 minutes or until golden and crispy

  6. Serve the baked potatoes with the cashew sauce on top or on the side
