Vegan Baked Hasselback Potatoes with Sauce
Ingredients
- 4 baking potatoes
- Herb oil
- 1.5 cups soaked cashews
- 1.5 tbsp coconut oil
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp Italian herbs
- 1.5 tbsp nutritional yeast
- 2 tsp salt
- Juice of 1 lemon
Preparation
Blend the soaked cashews with coconut oil, onion powder, garlic powder, Italian herbs, nutritional yeast, salt, and lemon juice to create a sauce
Preheat oven to 200°C
Slice the baking potatoes in hasselback style, making thin cuts almost through to the bottom
Brush the sliced potatoes with herb oil
Place the potatoes on a baking tray and bake for 45-60 minutes or until golden and crispy
Serve the baked potatoes with the cashew sauce on top or on the side
