Baked Popcorn Cauliflower with Tofu Coating
Ingredients
- 1 medium head cauliflower
- 12 oz firm tofu
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tablespoon nutritional yeast
- 1/2 cup gluten-free flour
- 3/4 cup water
- 1 tsp salt
Popcorn blend
- 6 cups popped popcorn
- 1/2 cup gluten-free flour
- 1 tsp Italian seasoning
Preparation
Preheat oven to 450 F.
Whisk together the tofu and salt mixture. Set aside.
Put air-popped popcorn, flour, and Italian seasoning into a food processor and process until crumbly. Transfer to a bowl.
Coat cauliflower florets in the wet mixture.
Toss the coated cauliflower in the popcorn blend.
Place on a parchment-lined baking sheet.
Bake for 15 minutes.
Spray with a little oil.
Bake for another 10-15 minutes.
Serve immediately.
Tips
Use a gluten-free flour blend like Bob's Red Mill for best results. Regular all-purpose or whole wheat flour can be substituted if not gluten-free.
