Baked Popcorn Cauliflower with Tofu Coating

Ingredients

  • 1 medium head cauliflower
  • 12 oz firm tofu
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tablespoon nutritional yeast
  • 1/2 cup gluten-free flour
  • 3/4 cup water
  • 1 tsp salt

Popcorn blend

  • 6 cups popped popcorn
  • 1/2 cup gluten-free flour
  • 1 tsp Italian seasoning

Preparation

  1. Preheat oven to 450 F.

  2. Whisk together the tofu and salt mixture. Set aside.

  3. Put air-popped popcorn, flour, and Italian seasoning into a food processor and process until crumbly. Transfer to a bowl.

  4. Coat cauliflower florets in the wet mixture.

  5. Toss the coated cauliflower in the popcorn blend.

  6. Place on a parchment-lined baking sheet.

  7. Bake for 15 minutes.

  8. Spray with a little oil.

  9. Bake for another 10-15 minutes.

  10. Serve immediately.

Tips

  1. Use a gluten-free flour blend like Bob's Red Mill for best results. Regular all-purpose or whole wheat flour can be substituted if not gluten-free.
