Easy Vegan Gluten-Free Queso Dip
Ingredients
- 1/2 cup sushi rice
- 1 1/2 cup yellow veggie stock
- 1/2 carrot, diced
- 2 Tbsp mellow miso
- 2 Tbsp nutritional yeast
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp apple cider vinegar
- 1/2 tsp salt
- 2 Tbsp corn starch
- 1 1/2 cup water
Preparation
Bring rice, stock, and carrot to a boil then reduce heat to medium/low and cook for 15 minutes.
Add the rest of the ingredients and blend until smooth.
Heat while whisking.
It will look thin at first but thickens a lot as it cools. Blend again before serving to ensure smoothness.
