Easy Vegan Gluten-Free Queso Dip

Ingredients

  • 1/2 cup sushi rice
  • 1 1/2 cup yellow veggie stock
  • 1/2 carrot, diced
  • 2 Tbsp mellow miso
  • 2 Tbsp nutritional yeast
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp salt
  • 2 Tbsp corn starch
  • 1 1/2 cup water

Preparation

  1. Bring rice, stock, and carrot to a boil then reduce heat to medium/low and cook for 15 minutes.

  2. Add the rest of the ingredients and blend until smooth.

  3. Heat while whisking.

  4. It will look thin at first but thickens a lot as it cools. Blend again before serving to ensure smoothness.
