Vegan Sweet Potato Cashew Queso
Ingredients
- 1 cup mashed sweet potato, cooled
- 1/4 cup cashew base or raw cashew butter or 1/3 cup raw cashews soaked overnight and drained
- 1/4 cup white miso
- 1 can diced tomatoes with juice
- 1/2 cup water (add more if using soaked cashews)
- Juice of 1 lemon
- 2 tablespoons nutritional yeast
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne (adjust for spiciness)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
Preparation
Add all ingredients to a food processor.
Puree until totally smooth.
Add more water if desired for a thinner consistency.
To serve, microwave or heat on stove top until warm and serve with Kohlrabi fries or tortilla chips.
