Vegan Sweet Potato Cashew Queso

Ingredients

  • 1 cup mashed sweet potato, cooled
  • 1/4 cup cashew base or raw cashew butter or 1/3 cup raw cashews soaked overnight and drained
  • 1/4 cup white miso
  • 1 can diced tomatoes with juice
  • 1/2 cup water (add more if using soaked cashews)
  • Juice of 1 lemon
  • 2 tablespoons nutritional yeast
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne (adjust for spiciness)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt

Preparation

  1. Add all ingredients to a food processor.

  2. Puree until totally smooth.

  3. Add more water if desired for a thinner consistency.

  4. To serve, microwave or heat on stove top until warm and serve with Kohlrabi fries or tortilla chips.
