Vegan Roasted Red Pepper Pasta

Ingredients

  • 2 red bell peppers
  • Cashew yogurt (a few tablespoons)
  • Nutritional yeast
  • Red onion
  • Red pepper
  • Garlic
  • Salt
  • Olive oil (a bit)
  • Chickpea casarecce pasta
  • Kale
  • Mushrooms

Preparation

  1. Broil 2 split red peppers for about 15 minutes.

  2. Remove the skins from the peppers.

  3. Blend the peppers with cashew yogurt, nutritional yeast, red onion, red pepper, garlic, salt, and olive oil.

  4. Cook the chickpea casarecce pasta according to package instructions

  5. Sauté kale and mushrooms until tender

  6. Toss the pasta with the sauce and top with kale and mushrooms
