Chocolate & Coconut Banana Cookies
Ingredients
- 1 large banana, mashed
- 3/4 cup (75 g) shredded coconut (I used @bioklasa)
- Dark chocolate (@roshen_bulgaria)
Preparation
Preheat the oven to 180°C (350°F).
In a mixing bowl, combine the mashed banana and shredded coconut until well combined.
Line a baking tray with parchment paper.
Take spoonfuls of the banana-coconut mixture and form thin cookies, placing them on the prepared baking tray.
Bake the cookies in the preheated oven for 10-15 minutes or until they turn golden brown.
Once baked, transfer the cookies to a cooling rack and let them cool.
While the cookies are cooling, melt the dark chocolate in the microwave or using a double boiler.
Dip each cooled cookie into the melted chocolate, coating one side.
Sprinkle some additional shredded coconut on top of the chocolate-coated side of the cookies.
Allow the chocolate to set by placing the cookies on a parchment-lined tray or plate.
Once the chocolate is firm, the cookies are ready to enjoy!
