Chocolate & Coconut Banana Cookies

Ingredients

  • 1 large banana, mashed
  • 3/4 cup (75 g) shredded coconut (I used @bioklasa)
  • Dark chocolate (@roshen_bulgaria)

Preparation

  1. Preheat the oven to 180°C (350°F).

  2. In a mixing bowl, combine the mashed banana and shredded coconut until well combined.

  3. Line a baking tray with parchment paper.

  4. Take spoonfuls of the banana-coconut mixture and form thin cookies, placing them on the prepared baking tray.

  5. Bake the cookies in the preheated oven for 10-15 minutes or until they turn golden brown.

  6. Once baked, transfer the cookies to a cooling rack and let them cool.

  7. While the cookies are cooling, melt the dark chocolate in the microwave or using a double boiler.

  8. Dip each cooled cookie into the melted chocolate, coating one side.

  9. Sprinkle some additional shredded coconut on top of the chocolate-coated side of the cookies.

  10. Allow the chocolate to set by placing the cookies on a parchment-lined tray or plate.

  11. Once the chocolate is firm, the cookies are ready to enjoy!
