Easy Gluten-Free Carrot Cinnamon Muffins
Ingredients
- 1 Tbsp chia seeds + 3 Tbsp water
- 3 small carrots
- 50g gluten-free flour
- 50g brown rice flour
- 1 tsp baking powder
- 50g ground almonds
- 1 tsp cinnamon + cardamom
- Pinch of nutmeg, ginger, salt
- 2 Tbsp maple syrup
- 80ml almond milk
- 50g raisins
Preparation
Mix the chia with water and let it sit for 10 minutes, stirring well.
Put both flours, ground almonds, baking powder, and all the spices in a mixing bowl.
Peel and cut the carrots, then blend them with the chia mixture for a few seconds to break them up without mashing.
Add the carrot-chia mixture to the dry ingredients along with the syrup and almond milk, and mix everything.
Add the raisins.
Bake the muffins for 20 to 30 minutes at 180°C.
