Easy Gluten-Free Carrot Cinnamon Muffins

Ingredients

  • 1 Tbsp chia seeds + 3 Tbsp water
  • 3 small carrots
  • 50g gluten-free flour
  • 50g brown rice flour
  • 1 tsp baking powder
  • 50g ground almonds
  • 1 tsp cinnamon + cardamom
  • Pinch of nutmeg, ginger, salt
  • 2 Tbsp maple syrup
  • 80ml almond milk
  • 50g raisins

Preparation

  1. Mix the chia with water and let it sit for 10 minutes, stirring well.

  2. Put both flours, ground almonds, baking powder, and all the spices in a mixing bowl.

  3. Peel and cut the carrots, then blend them with the chia mixture for a few seconds to break them up without mashing.

  4. Add the carrot-chia mixture to the dry ingredients along with the syrup and almond milk, and mix everything.

  5. Add the raisins.

  6. Bake the muffins for 20 to 30 minutes at 180°C.
