Vegan Breakfast Banana Muffins

Ingredients

  • 5 ripe bananas
  • 3 tablespoons chia seeds
  • 2 cups flour
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • pinch of nutmeg
  • 1/3 cup oat milk
  • dairy-free chocolate chips

Optional

  • chopped nuts
  • chopped dates
  • raisins

Preparation

  1. Preheat oven to 175°C and grease a muffin pan.

  2. Mash the bananas well and add the chia seeds.

  3. Add cinnamon, nutmeg, and vanilla essence.

  4. Add flour and baking powder and mix well.

  5. Add salt.

  6. Add oat milk while mixing until the mixture becomes smooth.

  7. Spoon into the muffin pan and bake until lightly golden, about 15 to 25 minutes in a fan oven.
