Oatmeal Raisin Mini Muffins
Ingredients
- 2 large ripe bananas, mashed
- 1 cups whole rolled oats
- 1/4-1/3 cup raisins (depending on how many you like)
- 1 tablespoon chia seeds (optional)
- 1/2 teaspoon cinnamon
- pinch of salt
Preparation
Preheat oven to 350 degrees and grease a mini muffin tray
In a medium sized bowl combine mashed banana, oats and raisins until well incorporated
Then add chia seeds, cinnamon and salt. Mix to combine
Scoop mixture into mini muffin tin about 3/4 of the way full to make 11-12 muffins
Bake in the oven for about 12-14 minutes
Remove from oven and let cool in pan for about 5 minutes and then transfer to a wire rack to cool completely
