Vegan Banana Oatmeal Breakfast Bars

Ingredients

  • 2 mashed ripe bananas
  • 1/2 cup almond milk
  • 1 tablespoon coconut oil or vegan butter
  • 1 tablespoon maple syrup
  • 1 1/2 cups almond flour
  • 1 cup gf oats
  • 2 tablespoons flax meal
  • dash of cinnamon
  • 1/4 cup mini vegan chocolate chips
  • 1 teaspoon baking powder

Optional

  • 1 scoop protein powder
  • 1 teaspoon Maca powder

Preparation

  1. Mix banana, milk, maple, and butter in a large bowl until creamy

  2. Add flour, oats, cinnamon, flax meal, baking powder and chocolate; mix well and let sit for about 5-10 minutes

  3. Pour into a lightly oiled 8x8 baking dish and bake at 350 for 25-30 minutes or until baked through
