5-Minute Buckwheat Protein Waffles

Ingredients

  • 1 tbsp flax meal
  • 1 cup unsweetened dairy free milk
  • 1 tbsp coconut oil or any nut butter
  • 3/4 cup buckwheat flour
  • 1/4 cup almond or cassava flour
  • 1/4 cup protein powder
  • 1/2 tsp baking powder
  • Dash of cinnamon

Optional

  • 1 tbsp maple syrup, monk fruit or 2 tbsp coconut sugar

Preparation

  1. In a medium size bowl, mix flax, milk, and oil or nut butter.

  2. Add flours, protein, baking powder, cinnamon, and natural sweetener if using.

  3. Mix until thick, sticky batter forms.

  4. Spray or lightly spread coconut oil to a waffle maker.

  5. Spoon about 1/4 cup into the maker and let it work its magic.

  6. Repeat for as many waffles as your heart desires.

  7. Then top with superfoods like cacao, nut butter, banana, cinnamon, coconut oil, or maple.
