Simple Vegan Blueberry Baby Pancakes

Ingredients

  • 1 1/2 cups of all purpose flour or whole wheat flour
  • 1 tbsp of flax meal mixed with 1/3 cup of plant milk (soy or almond) and 1 tsp of apple cider vinegar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp kosher salt
  • 3 tbsp of maple syrup
  • 1 cup of plant milk
  • 1 tbsp of coconut oil or vegan butter
  • 1 tsp of pure vanilla extract
  • Coconut oil or spray for cooking

Preparation

  1. Combine flour, baking soda, baking powder, and salt together in a bowl.

  2. Add flax meal vinegar mixture, maple syrup, melted coconut oil, vanilla, and soy milk.

  3. Mix everything to combine to make a pancake batter without over mixing.

  4. Set aside for 10 minutes.

  5. Add the blueberries to the batter.

  6. Cook pancakes in a cast iron pan with a teaspoon of coconut oil over medium heat.

  7. Use a 1 teaspoon measurement spoon for perfect size baby pancakes.

  8. Serve with fruits and maple syrup.
