Protein-Packed Blueberry Pancakes with PB Drizzle
Ingredients
- 2/3 cup oat flour
- 2 flax eggs
- 1/2 tsp baking powder
- 1 scoop protein powder (low FODMAP)
- 2 tbsp macadamia or almond milk
- 1/2 - 1 mashed banana (depending on preferred level of sweetness)
- Dash of cinnamon
- Dash of salt
Toppings
- Fresh blueberries (frozen for topping)
- Peanut butter (for topping)
Preparation
Mix all ingredients into a bowl, folding the blueberries in last
Use butter or coconut oil to grease the pan, and place about 1/4 cup of the batter at a time into the pan
Flip when the pancake begins to bubble
Stack the pancakes and top with some frozen blueberries and peanut butter
