Protein-Packed Blueberry Pancakes with PB Drizzle

Ingredients

  • 2/3 cup oat flour
  • 2 flax eggs
  • 1/2 tsp baking powder
  • 1 scoop protein powder (low FODMAP)
  • 2 tbsp macadamia or almond milk
  • 1/2 - 1 mashed banana (depending on preferred level of sweetness)
  • Dash of cinnamon
  • Dash of salt

Toppings

  • Fresh blueberries (frozen for topping)
  • Peanut butter (for topping)

Preparation

  1. Mix all ingredients into a bowl, folding the blueberries in last

  2. Use butter or coconut oil to grease the pan, and place about 1/4 cup of the batter at a time into the pan

  3. Flip when the pancake begins to bubble

  4. Stack the pancakes and top with some frozen blueberries and peanut butter
