Fluffy Vegan Gluten Free Blueberry Pancakes
Ingredients
- 1 cup GF oat flour
- 1 cup unsweetened almond milk
- 2 tbsp liquid coconut oil
- 3 tbsp plant protein powder
- 1/4 cup fresh blueberries
- 1 tbsp monk fruit or maple syrup
- 1 tbsp baking powder
- 1/2 tbsp cinnamon
- 1 tsp vanilla
Toppings
- organic creamy peanut butter
- pure maple syrup
- banana
- raw cacao nibs
Preparation
In a large bowl, mix oat flour, coconut oil, almond milk, monk fruit or maple syrup, baking powder, vanilla and cinnamon until no clumps.
Fold in blueberries.
Let batter sit for 5 minutes.
Heat a skillet with a few drops of coconut oil.
Spoon batter onto the skillet and flip when bubbles appear.
Repeat until all batter is used.
Top with your favorite toppings.
