Fluffy Vegan Gluten Free Blueberry Pancakes

Ingredients

  • 1 cup GF oat flour
  • 1 cup unsweetened almond milk
  • 2 tbsp liquid coconut oil
  • 3 tbsp plant protein powder
  • 1/4 cup fresh blueberries
  • 1 tbsp monk fruit or maple syrup
  • 1 tbsp baking powder
  • 1/2 tbsp cinnamon
  • 1 tsp vanilla

Toppings

  • organic creamy peanut butter
  • pure maple syrup
  • banana
  • raw cacao nibs

Preparation

  1. In a large bowl, mix oat flour, coconut oil, almond milk, monk fruit or maple syrup, baking powder, vanilla and cinnamon until no clumps.

  2. Fold in blueberries.

  3. Let batter sit for 5 minutes.

  4. Heat a skillet with a few drops of coconut oil.

  5. Spoon batter onto the skillet and flip when bubbles appear.

  6. Repeat until all batter is used.

  7. Top with your favorite toppings.
