Chocolate Chip and Chia Pancakes
Ingredients
- 1/3 cup unsweetened applesauce
- 2/3 cup unsweetened almond milk
- 1 tbsp pure maple syrup
- 1/2 tbsp apple cider vinegar
- 1 tbsp chia seeds
- 1 cup gf oat flour (I use sprouted from @sproutedflour)
- 2 tbsp vegan chocolate chips (I used @santabarbarachocolate)
- 1/2 tsp baking soda
- Dash of Ceylon cinnamon
- Optional: 1 tbsp psyllium husk for extra fiber
Preparation
In a large bowl, mix applesauce, almond milk, apple cider vinegar, maple, and chia seeds.
Let sit for about two minutes.
Add remaining ingredients and stir until thick batter forms.
Lightly oil a skillet and spoon batter, flipping after about 1-2 minutes, repeat until batter is done.
Top with vegan butter (or ghee), maple, and coconut. Enjoy!
