Chocolate Chip and Chia Pancakes

Ingredients

  • 1/3 cup unsweetened applesauce
  • 2/3 cup unsweetened almond milk
  • 1 tbsp pure maple syrup
  • 1/2 tbsp apple cider vinegar
  • 1 tbsp chia seeds
  • 1 cup gf oat flour (I use sprouted from @sproutedflour)
  • 2 tbsp vegan chocolate chips (I used @santabarbarachocolate)
  • 1/2 tsp baking soda
  • Dash of Ceylon cinnamon
  • Optional: 1 tbsp psyllium husk for extra fiber

Preparation

  1. In a large bowl, mix applesauce, almond milk, apple cider vinegar, maple, and chia seeds.

  2. Let sit for about two minutes.

  3. Add remaining ingredients and stir until thick batter forms.

  4. Lightly oil a skillet and spoon batter, flipping after about 1-2 minutes, repeat until batter is done.

  5. Top with vegan butter (or ghee), maple, and coconut. Enjoy!
