Vegan Buckwheat Pancake Stack
Ingredients
- 1 tbsp flax meal
- 2 tbsp water
- 1 cup unsweetened nut milk
- 1 tbsp coconut oil
- 3/4 cup buckwheat flour
- 1/4 cup almond flour or cassava flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- lots of cinnamon
Optional
- monk fruit
- 1 tbsp maple or coconut sugar
Preparation
In a large bowl, mix flax meal with water and let it sit for 2 minutes.
Stir in unsweetened nut milk and coconut oil.
Add buckwheat flour, almond flour or cassava flour, baking soda, baking powder, and cinnamon, then stir until the mixture is thick and creamy.
Heat a skillet over medium heat and spray with oil
Pour the batter onto the skillet to form pancakes, cook until bubbles appear on the surface, then flip and cook until golden brown
Repeat with remaining batter, spraying the skillet with oil between each pancake as needed.
Serve topped with vegan butter, pure maple syrup, and a blend of nut butter and vegan chocolate chips.
