Pink Smoothie Bowl with Granola

Ingredients

Granola

  • 8 tbsp porridge oats
  • 2 tbsp Brazil Nuts
  • 2 tbsp pumpkin seeds
  • 2 tbsp dried cranberries
  • 2 tbsp coconut oil
  • 2 tbsp agave syrup
  • 1 tbsp flax seed

Smoothie

  • 2 Pink Lady Apples
  • 100g vegan yoghurt
  • 2 handfuls strawberries
  • 1 banana
  • 1 tbsp agave syrup

Preparation

  1. Chop the Brazil nuts into small pieces.

  2. Toast the Brazil nuts, pumpkin seeds, flax seeds and oats in a dry frying pan for about 3-4 minutes or until you can start to smell the fragrance of the nuts.

  3. Add the coconut oil, syrup and cranberries and toast, stirring frequently until the pumpkin seeds are starting to pop.

  4. Turn out onto a plate to cool.

  5. Once cool, break up into clusters.

  6. For the smoothie, core the apples, but leave the peel on.

  7. Chop the banana and hull the strawberries.

  8. Place all in a blender along with the yoghurt and agave and blend until smooth.

  9. Pour into bowls, top with slices of apple and some granola. Enjoy!
