Creamy Vegan Mac and Cheese

Ingredients

  • 10 ounces dry pasta of your choice
  • 1 cup cashews
  • 1/4 cup chopped onion
  • 1 cup diced and steamed carrots
  • 1 cup unsweetened almond milk
  • 1/3 cup vegan cheese
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • pinch of cayenne pepper

Preparation

  1. Cook pasta according to package instructions, drain and set aside.

  2. Add all ingredients except pasta to your food processor or blender and blend for about 1 minute, or until completely smooth.

  3. Heat a small amount of oil in a large skillet, add pasta, and then cheese sauce.

  4. Heat for a minute, add salt or spices if needed and serve.
