Nutty Tempeh with Creamy Mashed Potatoes

Ingredients

  • for the nut butter sauce:⠀⠀⁠⠀
  • 2cm piece of fresh ginger, coarsely chopped⠀⠀⁠⠀
  • 1/2 cup natural nut butter (peanut and macadamia work best - i use @foodtonourish cashew - recently declared fodamp friendly! ?)⠀⁠⠀
  • 1 tbsp tamari sauce (wheat-free soy sauce)⠀⠀⁠⠀
  • juice of 1/2 a fresh lemon⠀⠀⁠⠀
  • 2-6 tbsp filtered water⠀⠀⁠⠀
  • optional: 1 tsp sriracha sauce or cayenne pepper (if you want a kick!) ⠀⠀⁠⠀
  • for the creamy mashed potatoes:⠀⠀⁠⠀
  • 2 large organic red-skinned potatoes, washed, peeled and cut into roughly 2cm cubes⠀ • 1 cup of unsweetened canned organic coconut milk or soy protein milk⠀⠀⁠⠀
  • 2 tbsp extra virgin olive oil⠀⠀⁠⠀
  • 1/2 cup nutritional yeast flakes⠀⠀⁠⠀
  • himalayan salt and black pepper to taste⠀⠀⁠⠀
  • green tips of a spring onion (to garnish) ⠀⠀⁠⠀
