Nutty Tempeh with Creamy Mashed Potatoes
Ingredients
- for the nut butter sauce:⠀⠀⠀
- 2cm piece of fresh ginger, coarsely chopped⠀⠀⠀
- 1/2 cup natural nut butter (peanut and macadamia work best - i use @foodtonourish cashew - recently declared fodamp friendly! ?)⠀⠀
- 1 tbsp tamari sauce (wheat-free soy sauce)⠀⠀⠀
- juice of 1/2 a fresh lemon⠀⠀⠀
- 2-6 tbsp filtered water⠀⠀⠀
- optional: 1 tsp sriracha sauce or cayenne pepper (if you want a kick!) ⠀⠀⠀
- for the creamy mashed potatoes:⠀⠀⠀
- 2 large organic red-skinned potatoes, washed, peeled and cut into roughly 2cm cubes⠀ • 1 cup of unsweetened canned organic coconut milk or soy protein milk⠀⠀⠀
- 2 tbsp extra virgin olive oil⠀⠀⠀
- 1/2 cup nutritional yeast flakes⠀⠀⠀
- himalayan salt and black pepper to taste⠀⠀⠀
- green tips of a spring onion (to garnish) ⠀⠀⠀
