Spicy Tomato Sauce with Baked Falafels and Rice

Ingredients

  • Frozen falafel (quantity as per package)
  • Rice (quantity not specified)
  • 1 large chilli with seeds
  • 4 cloves of garlic
  • 1 red onion
  • Half pack of chestnut mushrooms
  • 1 red and 1 yellow pepper
  • 1 tin chopped tomatoes
  • 1 tin kidney beans
  • 500ml stock
  • 250g sweetcorn
  • 1/2 teaspoon rosemary
  • Heaped teaspoon tomato purée
  • 1 teaspoon basil
  • Season to taste

Preparation

  1. Bake the frozen falafels in the oven for 15 minutes.

  2. Whip up a spicy tomato sauce by cooking the listed ingredients together.

  3. Mix the baked falafels with the sauce.

  4. Serve with rice.
