One-Pot Vegan Meatball and Tomato Pasta
Ingredients
- 3.5 oz dry pasta of choice
- 1/2 red onion, chopped
- 1 garlic clove, minced
- 1 tsp olive oil
- 1 cup tomato sauce
- 1 1/2 cups water
- Sea salt to taste
- 2 tomatoes, chopped
- 3-5 frozen vegan meatballs
- 1 tsp coconut sugar (optional)
- 1 tsp Italian seasoning (optional)
Garnishes
- Basil
- Freshly ground pepper
Preparation
Add all ingredients to a pan or pot except the garnishes.
Cook over medium to high heat for 15 minutes, starting high to bring to a boil and reducing if necessary to ensure the pasta cooks through.
Taste test the pasta and add 3-5 more minutes if it is not fully cooked.
Enjoy with the garnishes.
