One-Pot Vegan Meatball and Tomato Pasta

Ingredients

  • 3.5 oz dry pasta of choice
  • 1/2 red onion, chopped
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1 cup tomato sauce
  • 1 1/2 cups water
  • Sea salt to taste
  • 2 tomatoes, chopped
  • 3-5 frozen vegan meatballs
  • 1 tsp coconut sugar (optional)
  • 1 tsp Italian seasoning (optional)

Garnishes

  • Basil
  • Freshly ground pepper

Preparation

  1. Add all ingredients to a pan or pot except the garnishes.

  2. Cook over medium to high heat for 15 minutes, starting high to bring to a boil and reducing if necessary to ensure the pasta cooks through.

  3. Taste test the pasta and add 3-5 more minutes if it is not fully cooked.

  4. Enjoy with the garnishes.
