Homemade Vegan Vegetable Dumplings
Ingredients
Dumpling dough
- 2 1/2 cups all purpose flour
- 3/4 cup boiling water
- 1/4 tsp salt
Filling
- 1/3 block firm or extra firm tofu
- 1 carrot
- 5 green onions
- 1 cup cabbage of choice
- 1 cup kale
- 1/2 tsp ground ginger
- 1/2 tsp sesame oil
- 1 tbsp soy sauce
Dipping sauce
- 1/4 cup soy sauce
- 1/4 cup water
- 1/8 cup maple syrup
- 1/2 tsp rice vinegar
- 1/2 tbsp garlic powder
- Pinch of red pepper flakes
- 1 tbsp sesame oil
- 1/2 cup water
Preparation
Mix the flour and salt in a bowl, add boiling water, and stir to form a dough. Knead until smooth and let rest for 30 minutes.
Finely chop the tofu, carrot, green onions, cabbage, and kale. Combine them in a bowl with ground ginger, sesame oil, and soy sauce. Mix well.
Roll out the dough on a floured surface and cut into small circles.
Place a spoonful of filling in each dough circle and fold to seal the dumplings.
Cook the dumplings by steaming for 10-15 minutes or pan-frying until golden brown.
In a small bowl, whisk together all dipping sauce ingredients until well combined.
