Miso Glazed Aubergine with Sesame
Ingredients
- 1 large aubergine
- 2 teaspoons sesame oil (or alternative)
- 2 teaspoons miso paste
- 1 teaspoon honey/agave nectar or similar
- More oil for brushing
Optional additions
- Minced garlic and ginger
Garnish
- Sesame seeds
- Spring onions
Preparation
Mix the sesame oil and miso paste and agave together to make a paste
Cut the aubergine in half and score the flesh
Brush the aubergine all over with sesame oil
Brush the scores with the miso and sesame paste
Cook in the air fryer for 15 minutes at 180°C
Or cook in the oven until soft and cooked through
Sprinkle with sesame seeds and spring onions to serve
