No-Oat Vegan Pumpkin Protein Bites

Ingredients

  • 2 cups almond butter
  • 1/2 cup Coconut Flour
  • 1/2 cup Maple Syrup
  • 2 tsp Organic Cinnamon
  • 2 tsp Vanilla Extract
  • 1/2 cup Pumpkin Puree
  • 1/3 cup vanilla protein powder (I use @furtherfood, comment “protein” for a discount!)

Icing

  • 1/3 cup powdered sugar + 1-2 tbsp milk

Preparation

  1. In a bowl, mix together the almond butter, pumpkin puree, cinnamon, and maple syrup and vanilla extract

  2. Stir and then add in the coconut flour and protein powder

  3. Then roll the dough into about 10-12 balls

  4. Line a small plate with parchment paper and place the balls on it

  5. In a small bowl, whisk together the icing ingredients, start with 1 tbsp milk and slowly add more to thin the icing out to your liking

  6. Drizzle the bites with the icing

  7. Put the plate in the fridge for 1 hour
