Mom's Tomato Soup with Rice
Ingredients
- 1 liter of tomato purée and tomato chunks blended together
- 1 cup of tomato paste
- 1 cup of rice
- About 1/2 to 1 liter of water, depending on thickness
- 1 tablespoon of flour
- 1 tablespoon of olive oil
- 1 tablespoon of vegetable salt powder or stock cube
- Pepper to taste
Optional
- Cheese, grated, for serving
Preparation
Make the roux with oil and flour.
Add rice and vegetable salt to it and cook for a minute.
Add the tomato purée and 1/2 liter of water, stir and cook for 5 minutes before adding the tomato paste.
Cook the soup while stirring for about 5 more minutes and add more water if needed.
Lower the heat and cook for about 5 to 10 more minutes while stirring to avoid lumps, stopping when the rice is soft.
Add some pepper.
