Mom's Tomato Soup with Rice

Ingredients

  • 1 liter of tomato purée and tomato chunks blended together
  • 1 cup of tomato paste
  • 1 cup of rice
  • About 1/2 to 1 liter of water, depending on thickness
  • 1 tablespoon of flour
  • 1 tablespoon of olive oil
  • 1 tablespoon of vegetable salt powder or stock cube
  • Pepper to taste

Optional

  • Cheese, grated, for serving

Preparation

  1. Make the roux with oil and flour.

  2. Add rice and vegetable salt to it and cook for a minute.

  3. Add the tomato purée and 1/2 liter of water, stir and cook for 5 minutes before adding the tomato paste.

  4. Cook the soup while stirring for about 5 more minutes and add more water if needed.

  5. Lower the heat and cook for about 5 to 10 more minutes while stirring to avoid lumps, stopping when the rice is soft.

  6. Add some pepper.
