Quick Cauliflower Tofu Soup with Courgetti

Ingredients

  • 1 small cauliflower
  • 1 small red onion
  • 1 small white onion
  • 3 garlic cloves
  • 1 inch piece of ginger
  • 2 cubes vegetable stock
  • 1/2 teaspoon of turmeric
  • Himalayan salt
  • Black pepper
  • 1 medium courgette
  • 1 pack silken tofu

Preparation

  1. Chop the onions, garlic, and ginger in a grinder

  2. Boil a full kettle

  3. Coat the base of a pan with extra virgin olive oil and sauté the chopped paste of onions

  4. While these brown, wash and roughly chop a small cauliflower and spiralize the courgette and keep aside

  5. Rinse the tofu and cut into cubes, keep aside

  6. Add the cauliflower to the sauté and let cook for 5 minutes on high heat so the cauliflower browns quickly

  7. Season with turmeric, Himalayan salt, and freshly ground black pepper

  8. Stir and add kettle boiled water

  9. Let simmer for 5 minutes then hand blend

  10. Add the tofu and courgetti

  11. Serve hot
