Roasted Vegetable Soup with Spices

Ingredients

  • 3 peeled sweet potatoes
  • 2 red peppers
  • 1 red onion
  • 1 red chilli
  • 10 cherry tomatoes
  • 1 teaspoon chilli powder
  • mixed herbs
  • oregano
  • cumin
  • turmeric
  • Cajun spice
  • 1 teaspoon oil
  • 450ml vegetable stock

Preparation

  1. Chop up 3 peeled sweet potatoes, 2 red peppers, 1 red onion, 1 red chilli, and 10 cherry tomatoes.

  2. Place them in a roasting dish.

  3. Sprinkle a teaspoon of chilli powder, mixed herbs, oregano, cumin, turmeric, and Cajun spice over the vegetables with a teaspoon of oil.

  4. Toss the vegetables to ensure they are covered.

  5. Roast in the oven at 180 degrees for 30 minutes.

  6. Once cooked, add to a pan with 450ml of vegetable stock.

  7. Simmer for a few minutes.

  8. Blend until smooth.

  9. This soup is simple, healthy, and very yummy.
