Sweet Basil and Pepper Sauce

Ingredients

  • 2 x 400g tins of quality chopped tomatoes
  • 2 tbsp oil
  • 5 garlic cloves
  • 1 cup vegetable stock or water
  • 3 tsp coconut sugar
  • 1 tsp sea salt
  • 1 tbsp balsamic vinegar
  • pepper to taste
  • 1 red chilli (optional)
  • 15 basil leaves
  • 2 red peppers

Preparation

  1. Add the oil to a pan on medium heat, add the garlic and red peppers, and heat for 5 minutes.

  2. Add the chilli, tomatoes, sugar, salt, and pepper, and allow to simmer for 20 minutes on low heat.

  3. Stir in the basil and leave for another 5 minutes.

  4. The sauce is ready; blend if you prefer a smooth sauce.

  5. Refrigerate for up to 3 days or freeze for up to 3 months.

  6. Serve with pasta, spread on homemade pizzas, use as a base for sandwiches or wraps, or pour over nachos with cashew cream sauce for more options.
