Sweet Basil and Pepper Sauce
Ingredients
- 2 x 400g tins of quality chopped tomatoes
- 2 tbsp oil
- 5 garlic cloves
- 1 cup vegetable stock or water
- 3 tsp coconut sugar
- 1 tsp sea salt
- 1 tbsp balsamic vinegar
- pepper to taste
- 1 red chilli (optional)
- 15 basil leaves
- 2 red peppers
Preparation
Add the oil to a pan on medium heat, add the garlic and red peppers, and heat for 5 minutes.
Add the chilli, tomatoes, sugar, salt, and pepper, and allow to simmer for 20 minutes on low heat.
Stir in the basil and leave for another 5 minutes.
The sauce is ready; blend if you prefer a smooth sauce.
Refrigerate for up to 3 days or freeze for up to 3 months.
Serve with pasta, spread on homemade pizzas, use as a base for sandwiches or wraps, or pour over nachos with cashew cream sauce for more options.
