Slow Cooked Jackfruit Ragu with Pasta

Ingredients

  • 1 pack @jack&chill jackfruit
  • 1 red onion
  • 3 cloves of garlic
  • 1 tin chopped tomatoes
  • 1 tsp tomato paste
  • 1/2 vegetable stock cube
  • 1 red chilli
  • 2 bay leaves
  • Handful of basil leaves
  • Olive oil
  • Salt
  • Pepper
  • Tagliatelle pasta

Preparation

  1. Dice up the onion, chilli and garlic.

  2. Heat a pan and then add oil and gently sauté the onions first, about 5 minutes.

  3. Once they have softened, add the garlic and chilli. Sauté for a further minute or two.

  4. Next, add tomato paste and then jackfruit.

  5. Stir everything together and then add the chopped tomatoes.

  6. Use the empty can to fill with water and pour that in too.

  7. Crumble stock cube in, add bay leaves, salt and pepper.

  8. Bring to a boil and then let simmer for about 20 minutes stirring occasionally.

  9. Cook pasta according to packet and then serve with the ragu on top.
