Asparagus and Vegetable Pasta

Ingredients

  • 1 bunch of cut asparagus
  • 1 cup of chopped spinach
  • 1 cup of sliced mushrooms
  • 2 crushed garlic cloves
  • 1 red onion diced
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • Pepper
  • 1 packet of spaghetti
  • 1 cup of peeled tomatoes
  • 1 tablespoon of organic tomato paste

Preparation

  1. In a fry pan, add the oil, onions, garlic, mushrooms, spinach, asparagus, salt and pepper and sauté for 10 minutes.

  2. Then add the peeled tomatoes and organic tomato paste.

  3. Cook with a lid on for 20 minutes on medium heat.

  4. Cook the pasta according to package instructions.

  5. Add the cooked pasta to the sauce.
