Asparagus and Vegetable Pasta
Ingredients
- 1 bunch of cut asparagus
- 1 cup of chopped spinach
- 1 cup of sliced mushrooms
- 2 crushed garlic cloves
- 1 red onion diced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- Pepper
- 1 packet of spaghetti
- 1 cup of peeled tomatoes
- 1 tablespoon of organic tomato paste
Preparation
In a fry pan, add the oil, onions, garlic, mushrooms, spinach, asparagus, salt and pepper and sauté for 10 minutes.
Then add the peeled tomatoes and organic tomato paste.
Cook with a lid on for 20 minutes on medium heat.
Cook the pasta according to package instructions.
Add the cooked pasta to the sauce.
