Best Ever Breakfast Potatoes

Ingredients

  • 4-5 red potatoes, scrubbed and cubed or 1.5 lbs mini potatoes, quartered
  • 1 small red onion, chopped
  • 1 red pepper, chopped
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • a pinch of cayenne pepper
  • a pinch of salt
  • 1-2 green onion, sliced for garnish

Preparation

  1. Spread out potatoes, pepper and onion over a parchment lined baking sheet

  2. In a small bowl, whisk together oil, syrup, cumin, turmeric, cayenne and salt

  3. Drizzle over potato mixture and mix until well coated

  4. Bake in a preheated oven at 425 degrees f for 25 mins

  5. Set oven to broil and continue baking for 4-5 mins

  6. Garnish with green onion
