Spring Onion Curry and Roti

Ingredients

  • Finely chopped spring onion
  • green chilies
  • turmeric
  • mustard
  • cumin
  • soaked lentil
  • oil

Preparation

  1. Cook 1/4 cup of lentils in a pot until soft, drain the water and keep it aside.

  2. In a pan add oil and after the oil warms up add cumin, mustard and green chilies.

  3. Add turmeric and sauté for under 2 minutes.

  4. Add chopped spring onion and let it cook until all the water in spring onion is resolved.

  5. Add the cooked lentil and sauté well until all the spring onion and lentil are mixed evenly. The curry is ready.

Health benefits

  1. Spring onion is a good source of dietary fibre and vitamins A and B6, thiamine, folate and minerals (potassium, copper, chromium, manganese, iron). Some research suggests that spring onions may lower cholesterol levels, decrease the risk of heart attacks and strokes and have antibacterial and antifungal properties.
