Vegan Ground Beef Substitute with Cauliflower and Mushrooms

Ingredients

  • 1 large cauliflower
  • 10 dark cremini mushrooms
  • 1 cup oyster mushrooms
  • 1 medium onion
  • 1 cup walnuts, chopped
  • 2 cloves garlic
  • 2 tablespoons nutritional yeast
  • 1 tablespoon parsley flakes
  • 1.5 teaspoons oregano
  • 1.5 teaspoons cumin
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil (save 1 tbsp for greasing the pan)
  • 1 tablespoon soy sauce

Preparation

  1. Gradually add everything to a food processor. Pulse a little after each big ingredient that you add. Start with the cauliflower because it will be the hardest to process. Pulse until the texture is crumbly.

  2. Add everything to a baking sheet with olive oil. Bake on 300° for 1 hour. Take it out and mix everything once every 15 minutes.
