Quick Vegan Minestrone Soup Dinner
Ingredients
- 2 onions
- 3 cloves garlic
- 4 carrots (150 g)
- 1 zucchini (courgette)
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 can chopped tomatoes
- 1 tablespoon tomato paste
- 700 ml vegetable broth
- 200 g cooked white beans or butterbeans
- A handful of spinach
- 200 g uncooked pasta or macaroni
- Black pepper
Preparation
Add chopped onions and garlic to a pot
Add chopped carrots, zucchini, thyme, rosemary, and chopped tomatoes
Cook for a few minutes
Add tomato paste, vegetable broth, cooked white beans, a handful of spinach, and uncooked pasta
Simmer for 10-12 minutes until the pasta is cooked
Serve warm with oven-baked bread topped with vegan cheese, and season with thyme, salt, and pepper
